Copper Chef Celebrates National Potato Month with a Star-“Spudded” Dish

French fries, mashed, baked, home fries, tater tots; the list goes on and on for all of the different and delicious uses for potatoes. Potatoes, like eggs and corn, are one of the most versatile items that you can keep in your kitchen. About 110 pounds of potatoes are consumed per person in the United States alone. In fact, potatoes are such a highly consumed crowd favorite that the Potato Museum was built in Washington D.C. with over 2,000 potato related artifacts.

Yes, potatoes are as celebrated as much as they are consumed. And who can blame us? No burger is complete without French fries. No hoagie is a full meal without potato chips. If every great meal is accompanied by a potato sidekick, then what if we made potatoes the actual dinnertime superhero? That’s why, for this Copper Chef review, we’ll be sharing a truly delicious one pot meal that features potatoes as the star of the show.

Baked Potato Casserole

Ingredients

  • ½ teaspoon ground black pepper
  • ½ cup light sour cream
  • ½ cup sliced green onions
  • 1 teaspoon salt
  • 1 cup evaporated milk
  • 2 cups shredded cheese
  • 6 turkey bacon slices, cooked and crumbled
  • 8 medium potatoes, peeled and cut into 1-inch chunks

Directions
Preheat your oven to 350°F. Take a 2 ½ – 3-quart casserole dish and thoroughly grease it. While your oven preheats, place your potatoes into a large saucepan with water. Cover the pan and bring it to a boil. Cook your potatoes over a medium-high heat for about 15 – 20 minutes or until tender, depending on preference. Once the potatoes finished cooking, drain them and then return them to the saucepan.

In the saucepan with the potatoes, add in your evaporated milk, sour cream, salt, and pepper. Beat by hand until the combination is smooth. Next, stir in only 1 ½ cups of cheese and ½ of the bacon into the saucepan mixture. Once you’ve combined your items, spoon in the mixture into the prepared casserole dish that you previously greased.

Bake this dish for 20 to 25 minutes or until heated thoroughly. Take the remaining ½ cup of cheese, remainder of bacon, and the green onions and top the casserole with them. Bake for an additional 3 minutes or until the cheese is melted.

Take it out of the oven, let sit for a little, and then serve! This dish makes 16 servings.
